<li><strong>Make the Mixture:</strong> Form a mound with the flour on a clean surface and create a well in the center. Pour in the cooled lard and rub it into the flour using your fingertips until a fine, sandy texture is reached.</li>



<li><strong>Knead:</strong> Dissolve the sugar, salt, and egg in the warm water. Pour into the flour well and mix until combined. Knead vigorously for 10–15 minutes until smooth, soft, and elastic.</li>



<li><strong>Chill:</strong> Wrap tightly in plastic wrap and refrigerate for a minimum of 6 hours (overnight is ideal).</li>

<li><strong>Seal &amp; Crimp:</strong> Press out any trapped air, fold the circle in half, and pinch the top edges firmly together to seal completely. Create a tight braided crimp (<em>repulgue</em>) along the top seam to keep the liquid sealed inside.</li>



<li><strong>Chill:</strong> Place assembled salteñas on a tray and refrigerate for 30 minutes before baking to firm up the pastry.</li>
