DAY 1: Advance Preparation (Essential)

Chef’s Tip: Preparing the dough and filling the day before allows the flavors to mature and gives the gelatin time to set the broth into a solid block. This is the secret to getting a super juicy salteña without making a mess during assembly!

1. Prepare the Dough

1. Infuse the Lard: Over low heat, melt the lard with the ground annatto for 2–3 minutes to extract its bright orange-gold color. Strain to remove solids and let cool completely.
2. Make the Mixture: Form a mound with the flour on a clean surface and create a well in the center. Pour in the cooled lard and rub it into the flour using your fingertips until a fine, sandy texture is reached.
3. Knead: Dissolve the sugar, salt, and egg in the warm water. Pour into the flour well and mix until combined. Knead vigorously for 10–15 minutes until smooth, soft, and elastic.
4. Chill: Wrap tightly in plastic wrap and refrigerate for a minimum of 6 hours (overnight is ideal).

2. Prepare the Jigote

1. Caramelize & Spice: In a large pot, sauté the chopped onion with ½ cup of sugar over medium heat until golden and caramelized (8–10 minutes). Add the garlic, ají colorado, cumin, and black pepper. Cook for another 5 minutes until fragrant.
2. Brown Meat: In a separate skillet, brown the beef with a pinch of salt and pepper, then transfer it into the pot with the spiced onion mixture.
3. Add Broth & Gelatin: Pour in the hot beef broth and simmer for 20 minutes. Sprinkle the gelatin powder evenly over the liquid, stirring continuously until fully dissolved.
4. Combine & Chill: Remove from heat and gently fold in the cooked potatoes, peas, fresh parsley, and dried oregano. Let cool to room temperature, then cover and refrigerate overnight until it sets into a gelatinous solid.

DAY 2: Assembly & Baking

3. Assemble the Salteñas

1. Portion Dough: Remove the dough from the refrigerator 10 minutes before shaping. Divide into dough balls (approx. 60–70g each) and roll into 5–6 inch (12–15 cm) circles, leaving the center slightly thicker than the edges.
2. Fill: Place a generous scoop of the cold, solid jigote in the center. Top with a slice of hard-boiled egg and 1–2 black olives.
3. Seal & Crimp: Press out any trapped air, fold the circle in half, and pinch the top edges firmly together to seal completely. Create a tight braided crimp (repulgue) along the top seam to keep the liquid sealed inside.
4. Chill: Place assembled salteñas on a tray and refrigerate for 30 minutes before baking to firm up the pastry.

4. Bake & Serve

1. Preheat Oven: Preheat your oven to high heat: 480°F–500°F (250°C–260°C).
2. Arrange: Place the salteñas on a parchment-lined baking sheet, keeping the braided seam facing straight up and spacing them 2–3 inches apart.
3. Bake: Bake for 10–12 minutes until deep golden brown, shiny, and puffed. Do not overbake, or the pastry may burst and spill the broth!
4. Serve: Let rest for 2–3 minutes before serving warm.

How to Eat a Salteña Like a Local
